  • Almond Flour Fluffy Bagels

     

    As happy as I am that summer is still with us, I am starting to count down the days until fall. There's something so cozy about fall I can't help but get excited for. Sweaters, scarves, blankets, slippers, apple cider, and pumpkin donuts for dipping! For some reason, I had a little "Fall Fever" this morning, and decided to bake something comforting, despite the hot weather outside.

     

    I didn't have any pumpkin ingredients in stock, and I wanted to keep the recipe on the gluten-free side of things, so I decided to whip up some Almond Flour Fluffy Bagels.

     

    Ever since I bought donut pans at HomeGoods, I've been looking for excuses to put them to use!

    Bagels turn out great with these donut pans. They fluff right up once you throw them in the oven, and they're a cute, perfect serving size once they're cooled.

     

    I also wanted to make bagels without gluten. I tend to get bloated with gluten products and have found better GI relief when I avoid wheat flour in recipes. I had some unblanched almond flour in my pantry, and decided to use that as my main flour ingredient.

     

    Blanched vs. unblanched almond flour?

    Blanched almonds are briefly dropped into boiling water until their shells have softened and slide right off. The flour made from blanched almonds is finer and more uniform in color since the almond casing has been removed. It makes for a more homogenous flour and is preferred by some for baking and pastries.

     

    I, however, prefer unblanched almond flour. The texture of the flour is grittier because the almond shells are ground down and still intact and therefore adds a multi-dimensional texture to recipes. I also think there is something to be said for less processing and eating foods in their original, wholesome state.

     

    You're welcome to choose either option. I found an organic version of the blanched almond flour  and a non-GMO unblanched version.

     

     

    Let the cooking begin!

    Whether you prefer gluten-free or not, you're welcome to substitute any flour you'd like. If you do want to play around with different flours, it may be worth Googling some of the substitutions, as certain flours (like coconut) can be more absorbent than others and require additional ingredients (lots of eggs!) to balance the dry : wet ingredient ratios.

     

    Making these Almond Flour Fluffy Bagels is so simple. I even surprised myself when they came out of the oven, looking so fluffy and round! I felt like a true bagel professional...

    Almond Flour Fluffy Bagels

     2 ½ cups unblanched almond flour
     ¼ cup ground flaxseed
     1 tsp baking soda
     ¼ tsp salt
     5 eggs
     2 tbsp apple cider vinegar

    Preheat oven to 350 degrees F. Spray / grease the linings of 6-7 bagel rims.

    Mix all dry ingredients together in a medium mixing bowl until well integrated.

    Add in the wet ingredients and mix thoroughly.

    Pour mixture into a Gallon sized ziplock bag. With a scissor, snip off the tip of one of the corners to the bag.

    Squeeze the mixture to fill each of the bagel rims. Top with any additional toppings you'd like (optional: garlic powder, chia seeds, onion powder, cinnamon, raisins, chocolate chips, etc.!)

    Bake in the oven for 20-25 minutes. Remove from oven and allow to cool in pan for a few minutes. Remove from pan and place on paper towels until completely cooled.

    Smear with cream cheese, peanut / almond butter, jam, or whatever spread you prefer! Enjoy!
