    no bake, carrot bites

    Prep Time20 mins

     1 ½ cups nuts (walnuts / cashew/ pecan)
     ½ cup coconut flour
     2 cups shredded carrots
     12 pitted dates
     1 tbsp melted coconut oil
     2 tbsp honey
     1 tsp vanilla
     1 tsp nutmeg
     1 tsp ground clove
     1 tsp cinnamon
     ½ cup shredded unsweetened coconut
     ¼ cup nuts (walnuts / cashew/ pecan)
     ¼ cup hemp seeds

    Blend nuts and coconut flour in a Vitamix / blender into powder

    Add pitted dates, shredded coconut, and liquid ingredients (melted coconut, vanilla, honey)

    Add nutmeg, clove, and cinnamon

    Add shredded unsweetened coconut until well incorporated. Spoon into a bowl.

    Finely chop remaining 1/4c nuts and mix with hemp seeds

    Roll small balls of dough mixture in dry nut/hemp seed mixture

    Refrigerate for > 15 minutes to set, prior to eating
